Meet Lakhan Jethani, head chef and owner of Mizu.

Celebrating the uniqueness of the ingredients, Lakhan prefers his cooking to be simple and authentic. From the age of 12, he fell in love with food and over the years he enjoys experimenting with different dishes - without messing around with the ingredients much. We chatted with the talented chef and here's how it went…

How did you get into cooking?

My earliest memory of food is when I was 12 - I would make a basket from a tomato and fill it with fruits for my friends. That’s when I got into cooking.

What is the one thing that you love most about cooking?

It’s the power to change someone’s mood or make their day through food. Food can bridge differences and bridge boundaries at a dining table. It makes me the happiest when I’ve transformed someone’s mood with my food - what a great feeling.

Why was becoming a chef always on your list?

I always had a profound love for food and the only way to get closer to food was to become a cook.

What inspires you every day?

Everyday something inspires me especially my team - they really inspire me - looking at them work the way they do and each day they want to be better. Their dedication, hard work and passion for food really gives me love and joy and makes me want to work harder.

If you had not been a chef, what would you have been?

I would’ve been a musician. I play 2 instruments, I play the harmonica and I play the chromatic harp and I'm learning the trumpet.

What’s your favorite city in the world?

It has to be Montreux in Switzerland, that’s where I did my management. From my room where I was staying, I could see the Alps, French Riviera and Lake Geneva at one glance. Just image that view - wow. 

What are you doing when you’re not working?

I’m sleeping and resting my body, that’s what I'm doing haha.
